Spicy Tuna Crispy Rice
Crispy golden sushi rice squares topped with creamy spicy tuna and jalapeño — the viral Nobu-style appetizer everyone is making at home.

Ingredients
- 2 cups sushi rice, cooked
- 3 tbsp rice vinegar
- 1 tbsp sugar
- 1 tsp salt
- Neutral oil, for frying
- 8 oz sashimi-grade ahi tuna, finely diced
- 2 tbsp Kewpie mayo
- 1 tbsp sriracha
- 1 tsp soy sauce
- 1 tsp sesame oil
- 1 avocado, sliced
- 1 jalapeño, thinly sliced
- Sesame seeds and scallions, to garnish

Cook the sushi rice and season with rice vinegar, sugar, and salt while still warm.

Press the rice into a parchment-lined dish about ½-inch thick and chill for at least 2 hours until firm.

Cut the chilled rice into 12 squares.

Heat oil in a skillet over medium-high heat and fry the rice squares for about 3 minutes per side until golden and crisp.

Mix the diced tuna with Kewpie mayo, sriracha, soy sauce, and sesame oil.

Top each crispy rice square with a slice of avocado.

Spoon the spicy tuna mixture on top of the avocado.

Garnish with jalapeño slices, sesame seeds, and scallions, then serve immediately.
Tips
- Freezing the pressed rice block for 20 minutes before cutting makes it much easier to slice cleanly.
- Only use sashimi-grade fish from a trusted fishmonger since the tuna is served raw.
