Ingredients

  • 4 large yellow onions, thinly sliced
  • 4 tbsp butter
  • 1 tsp sugar
  • Salt, to taste
  • ½ cup dry white wine
  • 6 cups beef stock
  • 2 sprigs thyme
  • 1 bay leaf
  • 1 baguette, sliced
  • 2 cups shredded Gruyère cheese

    Melt the butter in a heavy pot, add the onions and sugar, and salt lightly.

    Cook the onions over medium-low heat for 45-60 minutes, stirring often, until deeply caramelized.
