Smash Burger Tacos

Ingredients
- 1 lb ground beef, 80/20
- Salt and pepper, to taste
- 8 small flour tortillas
- 8 slices American or cheddar cheese
- Shredded iceberg lettuce
- Diced pickles
- Diced white onion
- ½ cup mayonnaise
- 2 tbsp ketchup
- 1 tbsp mustard
- 1 tsp pickle juice
- ½ tsp garlic powder
- ½ tsp smoked paprika

Mix the mayo, ketchup, mustard, pickle juice, garlic powder, and paprika to make the special sauce; set aside.

Divide the beef into 8 small balls.

Heat a cast-iron skillet or griddle until very hot, place a tortilla directly on it, add a beef ball, and smash flat with a spatula through the tortilla.

Cook for 2 minutes until crispy and browned.

Flip the tortilla and patty together, and season with salt and pepper.

Add a slice of cheese and let it melt for about 1 minute.

Remove, spread with special sauce, and add lettuce, onion, and pickles.

Fold in half like a taco and serve immediately.
Tips
- Smashing the beef directly onto the tortilla in the hot pan lets it crisp and fuse slightly with the meat.
- Work in batches and keep finished tacos warm in a low oven.
