Kimchi Fried Rice with Fried Egg
A gut-health-trend favorite — smoky, tangy kimchi fried with rice and gochujang, crowned with a crispy fried egg, ready in under 20 minutes.
Ingredients
- 2 cups day-old cooked rice
- 1 cup chopped kimchi, plus 2 tbsp kimchi juice
- 2 tbsp sesame oil
- 1 tbsp gochujang
- 1 tbsp soy sauce
- 2 scallions, sliced
- 2 garlic cloves, minced
- 2 eggs
- 1 tsp vegetable oil
- Sesame seeds and nori strips, to garnish
Instructions

Heat 1 tbsp sesame oil in a large skillet or wok over medium-high heat.

Add the garlic and kimchi, and stir-fry for 3-4 minutes until slightly caramelized.

Add the rice, breaking up clumps, and stir-fry for 4-5 minutes.

Stir in the gochujang, soy sauce, and kimchi juice, tossing until evenly coated and slightly crispy at the edges.

Push the rice to one side, drizzle with the remaining sesame oil, add scallions, and stir briefly.

In a separate pan, fry the eggs sunny-side up in vegetable oil until the edges are crispy.

Plate the rice and top each portion with a fried egg.

Garnish with sesame seeds and nori strips, then serve hot.
Tips
- Use kimchi that is well-fermented and slightly sour for the best depth of flavor.
- Day-old, cold rice fries up much better than fresh rice, which can turn mushy.
