Hot Honey Chicken Sandwich

Ingredients
- 4 boneless chicken thighs, or breasts pounded thin
- 1 cup buttermilk
- 1 tsp hot sauce
- 1½ cups flour
- 1 tsp paprika
- 1 tsp garlic powder
- ½ tsp cayenne
- Salt and pepper, to taste
- Oil, for frying
- 4 brioche buns
- ½ cup honey
- 1-2 tbsp hot sauce or chili flakes, for the hot honey
- Butter, for the buns
- Pickles and coleslaw, to serve

Marinate the chicken in buttermilk and hot sauce for at least 1 hour, or overnight.

Mix the flour with paprika, garlic powder, cayenne, salt, and pepper.

Warm the honey gently with hot sauce or chili flakes to make the hot honey; set aside.

Dredge the marinated chicken in the seasoned flour, pressing to adhere; double-dip for extra crunch.

Heat oil to 350°F (175°C) in a heavy pot or skillet.

Fry the chicken for 5-7 minutes per side until golden brown and cooked through (165°F / 74°C internal).
