Ingredients

  • 4 boneless chicken thighs, or breasts pounded thin
  • 1 cup buttermilk
  • 1 tsp hot sauce
  • 1½ cups flour
  • 1 tsp paprika
  • 1 tsp garlic powder
  • ½ tsp cayenne
  • Salt and pepper, to taste
  • Oil, for frying
  • 4 brioche buns
  • ½ cup honey
  • 1-2 tbsp hot sauce or chili flakes, for the hot honey
  • Butter, for the buns
  • Pickles and coleslaw, to serve

Instructions

  1. 1

Marinate the chicken in buttermilk and hot sauce for at least 1 hour, or overnight.

  2. 2

Mix the flour with paprika, garlic powder, cayenne, salt, and pepper.

  3. 3

Warm the honey gently with hot sauce or chili flakes to make the hot honey; set aside.

  4. 4

Dredge the marinated chicken in the seasoned flour, pressing to adhere; double-dip for extra crunch.

  5. 5

Heat oil to 350°F (175°C) in a heavy pot or skillet.

  6. 6

Fry the chicken for 5-7 minutes per side until golden brown and cooked through (165°F / 74°C internal).

  7. 7

Drain on a rack and immediately drizzle with hot honey while still hot.

  8. 8

Toast the buttered buns, then assemble with pickles, coleslaw, and the hot honey chicken.

Tips

  • Double-dredging — flour, buttermilk dip again, flour again — gives an extra-craggy, crunchy crust.
  • Drizzle the hot honey while the chicken is still hot so it sets into a glossy glaze rather than sliding off.
