Ingredients

  • 3 tbsp olive oil
  • 1 onion, diced
  • 1 red bell pepper, diced
  • 3 garlic cloves, minced
  • 1 tsp cumin
  • 1 tsp paprika
  • ½ tsp chili flakes
  • 1 can (28 oz) crushed tomatoes
  • Salt and pepper, to taste
  • 6 eggs
  • ¼ cup crumbled feta
  • Fresh parsley and cilantro, to garnish
  • Crusty bread, to serve

Instructions

    Heat the oil in a large skillet and sauté the onion and pepper for 6-8 minutes until soft.

    Add the garlic, cumin, paprika, and chili flakes, and cook for 1 minute until fragrant.

    Pour in the crushed tomatoes and season with salt and pepper.

    Simmer uncovered for 12-15 minutes until thickened.

    Make 6 small wells in the sauce and crack an egg into each.

    Cover and cook for 6-8 minutes until the whites are set but the yolks are still runny.

    Sprinkle with feta and fresh herbs.

    Serve straight from the pan with crusty bread.
