Ingredients

  • 2 lbs fresh green beans, trimmed
  • 3 tbsp butter
  • 8 oz mushrooms, sliced
  • 1 small onion, diced
  • 3 garlic cloves, minced
  • 3 tbsp flour
  • 1½ cups chicken or vegetable broth
  • 1 cup heavy cream
  • Salt and pepper, to taste
  • ½ cup grated parmesan, optional
  • 1½ cups crispy fried onions

    Blanch the green beans in boiling salted water for 5 minutes, then drain and shock in ice water.

    Sauté the onion and mushrooms in butter until golden, about 8 minutes.

    Add the garlic and cook for 1 minute.

    Stir in the flour and cook for 1 minute to remove the raw taste.

    Gradually whisk in the broth, then the cream, until thickened into a sauce.
